How to: Mini Cupcakes

Last week I wrote about one of my new favorite things: My BabyCakes Mini Cupcake maker. I made whipped up these tasty treats and loved the outcome. Just follow this recipe for great results!

Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
Dash of salt
1/3 cup butter, softened
3/4 cup sugar
1/4 cup sour cream
3 egg whites
1/3 cup milk
2 teaspoons vanilla

Directions:
Combine flour, baking powder, and salt; set aside. Beat together butter and sugar until creamy. Beat in sour cream. Add e.g. whites and beat 2 minutes at highs speed, scraping bowl occasionally. Add half of flour and beat at low speed until blended. Add milk and blend well. Add remaining flour and beat at low speed until blended. Stir in vanilla. Fill each cup with about 2 tablespoons of batter. Bake in cupcake maker, about 5 to 6 minutes or until toothpick inserted on center comes out clean. Makes 16 mini cupcakes.

*To make confetti party cupcakes {as shown above and below} just stir in sprinkles to the batter.*
